Once the conversion is complete, the sweet liquid – now called wort – is transferred to the fermenters. Here, yeast is added, and the magic of fermentation begins. The yeast eats the sugars in the wort and converts them into alcohol.

After several days, the fermented wash is transferred to our distillation column stills. These beautiful copper behemoths are the heart of our bourbon-making operation, and they’re where the alcohol is separated from the water and other impurities.

The alcohol-rich vapor that comes off the still is captured and condensed back into a liquid. This “low wine” is then transferred to a second still, where it’s distilled a second time.

The end result is a clean, crisp spirit that’s around 140 proof. At this point, it’s called “white dog” because it’s completely clear.

To turn it into Jim Beam bourbon, we age it in freshly charred oak barrels. The length of time it spends in the barrel is a closely guarded family secret, but we will tell you this: Our bourbon is consistently aged for four years or more.

Once it’s fully aged, we bottle it at 90 proof and ship it off to you. And that, my friends, is how Jim Beam bourbon is made.

Is Scotch yeast free?
